Aniseed (Pimpinella anisum) yields a sweet, spicy, liquorice-like essential oil with a soft balsamic, woody undertone and a bright top note. High in anethole, it gives blends a recognisable anisic character.

Aromatherapy and home fragrance
Used to create a warm, comforting atmosphere. A little goes a long way, so use in small amounts or as an accent note in diffuser blends and room mists.

Perfumery
A classic in gourmand, fougère and oriental styles. Aniseed adds lift to citrus, depth to spice, and contrast to woods. It pairs well with mandarin, petitgrain, cardamom, fennel, coriander, cedarwood, sandalwood and soft resins or vanillas.

Skincare and formulation
Best at very low dilutions due to its potency. Common in soaps, balms and body oils when a sweet spice top note is desired. Go gently in facial or other leave-on products and combine with softer aromatics to round the profile.
